Tilapia and Fried Green Tomatoes

 

Ingredients: Tilapia fillets, green tomatoes, seasoned fish fry, peanut oil, 2 eggs, 3 tbsp butter, 1 cup of beer, 2 cups of flour, Cayenne pepper, peppercorn medley.

 

Instructions:

1.       Thoroughly rinse Tilapia fillets and green tomatoes.

2.       Soak fillets in fresh lemon juice (this will add a zesty lemon flavor and begin the cooking process).

3.       Slice tomatoes into desired portions.

4.       In a large bowl, mix the flour, butter, eggs, and beer together.

5.       Sprinkle in a dusting of the Cayenne pepper and the peppercorns to add a little heat to the mixture.

6.      Heat the peanut oil in a large skillet or fryer to between 350 – 375 degrees.

7.      Use a 2-step process to season the fish and tomatoes. (You will need a separate container for the fish fry).

(a)    Dip the fillets in the batter, coating them completely.

(b)    Dip the fillets directly from the batter into the fish fry to seal the batter.

8.     Lower the battered fillets into the hot peanut oil and allow to deep fry for 5 – 7 minutes.

9.     Remove the fish from the oil and place into a strainer or colander to cool down and drain excess oil..

10.   Repeat the 2-step process for the remainder of the fish and then the green tomato slices.
